Fried Prawns with Spicy Sauce
 

Ingredients For the prawns:
  • Prawns ½ kg
  • Eggs 2
  • Water 2 tbsp
  • Panko breadcrumbs 1 cup
  • Flour 1 cup
  • Salt to taste
  • Pepper to taste
  • Oil for frying
Sauce:
  • Chicken broth ¾ cup
  • Oyster sauce 2 tbsp
  • Chili paste 2 tbsp
  • Cornflour 1-½ tsp
Method:
  • Butterfly the prawns by cutting vertically down the back of the prawn. Leave tails on. Season with salt and pepper. Heat enough oil to deep fry them. Put panko breadcrumbs in a dish. Add seasonings to taste and mix well. Put flour in a separate shallow dish. Beat the eggs and water together. Dip the prawns in the egg-water mixture. Add the prawns to the flour. Toss to coat. Dip again in egg-water mixture. Toss in panko crumbs. Fry in hot oil until golden. To make the sauce, mix all of the ingredients for the sauce, making sure that the cornflour dissolves thoroughly. Heat oil. Add the sauce and let it simmer for 1 minute to thicken. Add the prawns, toss to coat, and simmer for 1 more minute.
