Mixed Vegetable Salad



Ingredients:

  • Tomatoes 2
  • Capsicums 2
  • Boiled beetroot 1
  • Boiled eggs 2
  • Cubed cheddar cheese ¼ cup
  • Lettuce or iceberg a few
  • Green or black olives a few
Dressing:
  • Balsamic vinegar 2 tbsp
  • Mustard 2 tsp
  • Salt a pinch
  • Olive oil 2 tbsp
Method:
  • Whisk the vinegar, mustard, and salt together in a bowl. Slowly drizzle the olive oil into the vinegar mixture while whisking constantly. Arrange the salad in rows on a large platter and then drizzle dressing on top.
