Falooda
Falooda
Ingredients:
- Milk 2 cups
- Basil seeds (tukhmalanga) 2 tbsp
- Rice noodles, soaked in warm water till soft ½ cup
- Rose sherbet or syrup 4-5 tbsp
- Rose ice cream a scoop
- Condensed milk 1 tin large
- Evaporated milk 1 tin large
- Rosegreen essence 1 tsp
- Red or pink food colour 14 tsp
- Cream 1 ½ cups
- To make the ice cream chill both the evaporated milk and the condensed milk tins and then beat well and add rosegreen essence and red or pink food colour. Mix well and add in cream and freeze. Remove and using a fork keep mixing ice cream so no ice crystals form. Do this at least thrice before finally letting it freeze overnight. Serve in scoops in the falooda. To assemble the falooda just before serving place 3 tbsp rose sherbet or syrup in a tall glass, add in milk and a little soaked thin rice noodles and the basil seeds. Then add the scoop of ice cream and serve immediately with a tall spoon and a straw.
