Potato Brinjal Pakoras
Ingredients
- Potatoes 2 medium
- Onion 1 medium
- Brinjal round 1 large
Ingredients for Batter
- Gram flour 225 gm
- Baking powder ¼ tsp
- Red chili powder ½ tsp
- Turmeric powder ¼ tsp
- Coriander powder 2 tsp
- Cumin powder 2 tsp
- Salt to taste
- Yogurt 2 tbsp
- Oil to deep fry
Method
- To prepare batter, mix all the dry ingredients in a bowl. Slowly beat in the yogurt, then a cup of water to form a thick, smooth batter. Beat it well and allow to stand for at least half an hour. Cut brinjals, potatoes and onion into thick round slices. Heat oil in a wok. Beat the batter lightly. Dip each slice of vegetable in the batter to coat lightly and deep fry until golden brown. Drain onto an absorbent paper. Serve hot with coconut or mint chutney.
