Vegetable Cheese Bake
Ingredients
- Carrots ½ cup
- French Beans ½ cup
- Peas ½ cup
- Cauliflower ½ cup
- Bread Crumbs 4 tbsp
- Capsicum, sliced 1
- Onion, sliced 1
- Cheddar Cheese grated ¼ cup
- Butter 1 tsp
- Ketchup ¼ cup
Ingredients for the White Sauce
- Flour 2 tbsp
- Milk 2 cups
- Butter 1 tbsp
- Nutmeg a pinch
- Sugar ¼ tsp
- Dried Oregano ½ tsp
- Pepper ¼ tsp
- Cheddar Cheese grated 3 tbsp
- Salt to taste
Method
- Blanch the vegetables and drain, reserving ¼ cup of the liquid. Refresh the blanched vegetables in cold water & drain. For the white sauce, melt butter in a pan on low heat. Add the flour & mix with the butter. Take pan off fire and add milk gradually using a whisk and then cook on low heat till the sauce thickens. Add pepper, grated cheese, dried oregano, nutmeg & salt and the reserved stock. Put the vegetables in a greased dish and pour the sauce evenly on the vegetables. Sprinkle bread crumbs, ¼ cup cheese, sliced onions & capsicum, pepper powder & dot with butter.Sprinkle a little ketchup on top. Bake in a pre-heated oven at 200C till it bubbles & the top turns a light golden brown about 20 minutes. Serve with garlic bread.
