Spicy Mac n cheese


Ingredients
  • Salt to taste
  • Freshly ground black pepper to taste
  • Butter 2 tbsp
  • Flour 3 tbsp
  • Garlic, sliced 5 cloves
  • Bay leaves 2
  • Milk 1 liter
  • Macaroni, boiled 2 cups
  • Tomatoes, chopped 8
  • Cheddar cheese grated 150 gm
  • Parmesan cheese grated 100 gm
  • Oregano a pinch
  • Worcestershire sauce 1 tsp
  • Nutmeg grated a pinch
  • Breadcrumbs ½ cup
  • Olive oil as required
Method
  • Melt the butter then add the flour Add all the sliced garlic until golden Add the bay leaves and slowly whisk in the milk a little at a time to ensure you get a nice smooth and thick sauce. Season tomatoes with salt and pepper. Drain the pasta and add it immediately to the sauce. Take the pan off the heat. Stir in both the grated cheese, chopped tomatoes and oregano leaves, Worcestershire sauce and nutmeg.Pour in a greased Pyrex dish and bake it for 30 minutes in the oven, until crispy and delicious.While it’s cooking, put your breadcrumbs and oregano into a pan with a few drizzles of olive oil over a medium heat. Stir and toss the crumbs around until crunchy and golden all over. Sprinkle the crispy breadcrumbs over and serve.
