Chinese Chicken Corn Soup


Ingredients
  • Chicken stock 3 cups
  • Creamed corn 1 cup
  • Cooked diced chicken 1 cup
  • Corn flour 1 tbsp
  • Cold water 2 tbsp
  • Egg whites 2
  • Parsley chopped 2 tbsp
Method
  • Combine chicken stock, creamed corn and chicken pieces in a large saucepan. Bring mixture to a boil over medium heat, stirring occasionally. Blend corn flour with cold water and add to soup. Continue cooking, uncovered, for 3 minutes. Beat egg whites, stir into soup.Reduce heat to a simmer and cook. Ladle soup into individual bowls and garish with parsley.
