Colourful Paneer Rice
Ingredients For Paneer:
- Milk 1 litre
- Curd 1/2 kg
- Salt 1 tbsp
- Rice 1 cup
- Sugar ¼ cup
- Assorted food colours
- Saffron essence
- Ghee 2 tbsp
- Cardamom powder 1 tsp
- Blanched almonds to garnish
- Boil the earlier soaked rice in hot water till par-boiled. Drain the rice, spread on a plate to cool. To make the paneer, boil the milk, add in the curd and salt and let it separate. This will take a few minutes. Immediately strain off entire liquid in a wet muslin-lined sieve or paneer mould and let the excess liquid drain out. Add a few drops of food colours on each side of paneer to colour it. Set aside to cool. Heat 2 tablespoons ghee and add sugar and cardamom powder. Add the par-boiled rice. Lightly mix. Add in any food colour to the rice. Lightly mix. Add in saffron essence. Simmer lightly. Serve decorated with blanched almonds.
