Gulab Firni
Ingredients:
- Rice 5 tbsp
- Milk 1 liter
- Sugar 8 tbsp
- Rose syrup 3 tbsp
- Cardamom powder 1/2 tsp
- Pistachios (blanched, peeled and sliced) 10-12
Method:
- Soak rice for 1 hour. Drain the water completely. Grind soaked rice to slightly coarse paste add few spoons of milk if needed while blending. Add 1/2 cup milk to the ground rice and keep aside. Boil the remaining milk in a pan. Once milk starts boiling, reduce the flame to low and add the ground rice paste. Keep stirring to avoid lumps. Add sugar and cardamom powder and cook it on a low flame till it turns thickens like custard. Take it off the stove and add rose syrup, mix properly and refrigerate for a few hours. Serve chilled topped with sliced pistachios.
