Caribbean Chicken
Ingredients:
- Boneless chicken breasts 4
- Oil 1 tsp
- Chopped onions 1-1/2
- Chopped red capsicum 1
- Chopped green capsicum 1
- Chopped roasted garlic 1 tbsp
- Coconut milk 1 cup
- Salt to taste
- Pepper to taste
- Crushed red chilli flakes 1 tsp
Method:
- Fry chicken breast in oil until the chicken just begins to brown. Stir onions, green and red capsicums into the pan with the chicken. Sauté until the onions are translucent. When the vegetables are translucent, stir in the garlic and coconut milk. Let the mixture cook 5 to 8 minutes before removing the skillet from the heat. Season it with salt, pepper, and red chilli flakes. Transfer the mixture to a 9x13 inch baking dish and bake in 220 degrees C oven for 45 minutes, or until the vegetables cook down and the chicken is tender.
