Moist Pineapple Cake


Ingredients:
  • Vanilla essence 1 tsp
  • Flour 2 cups
  • Sugar 2 cups
  • Baking soda 1 tsp
  • Crushed pineapple (un-drained) 16 oz
  • Eggs 2
For the Icing:
  • Coconut 1 cup
  • Butter 1/2 cup
  • Vanilla essence 1 tsp
  • Sugar 1 cup
  • Nuts 1 cup
  • Evaporated milk 3/4 cup
Method:
  • Place first 6 ingredients in a bowl & mix until blended with spoon. Pour into 13x9 inch cake pan. Bake at 180° C for 35-40 minutes. For the Icing, mix butter, sugar, and evaporated milk together and cook over medium heat until a little thickened. (This usually takes about 5 minutes at a boil). Remove from heat and add remaining ingredients. Pour over hot cake.
