Caribbean Chicken


Ingredients:
  • Boneless chicken breasts 4
  • Oil 1 tsp
  • Chopped onions 1-1/2
  • Chopped red capsicum 1
  • Chopped green capsicum 1
  • Chopped roasted garlic 1 tbsp
  • Coconut milk 1 cup
  • Salt to taste
  • Pepper to taste
  • Crushed red chilli flakes 1 tsp
Method:
  • Fry chicken breast in oil until the chicken just begins to brown. Stir onions, green and red capsicums into the pan with the chicken. SautĂ© until the onions are translucent. When the vegetables are translucent, stir in the garlic and coconut milk. Let the mixture cook 5 to 8 minutes before removing the skillet from the heat. Season it with salt, pepper, and red chilli flakes. Transfer the mixture to a 9x13 inch baking dish and bake in 220 degrees C oven for 45 minutes, or until the vegetables cook down and the chicken is tender.
