Chocolate Orange Cupcakes
Ingredients:
- Butter 4 oz
- Caster sugar 4 oz
- Eggs 2
- Flour 4 oz
- Baking powder 1-1/2 tsp
- Cocoa powder 1 oz
- Finely grated rind of 1 orange
- Orange peel to decorate
Icing:
Method:
- Beat butter and caster sugar, add eggs, flour, cocoa powder, baking powder, orange rind and beat till creamy. Pour in cupcake cases and bake at 180 degrees C for 20 minutes. Cool when done. For the icing, melt chocolate on a double boiler and let cool. Beat butter, add in icing sugar, sifted cocoa powder and cooled chocolate and pipe on the cooled cupcakes and decorate with orange peel and serve.
