Chocolate Peanut Cupcakes
Ingredients:
- Unsalted butter 5 oz
- Caster sugar 8 oz
- Eggs 3
- Flour 5 oz
- Baking powder 1-1/2 tsp
- Cocoa powder 1 oz
- Salted peanuts (chopped) 2 oz
- Water 3 tbsp
- Cream 3 fl oz
- Butter 1 oz
- Chocolate 4 oz
- Golden syrup 1 tbsp
Method:
- Beat butter and 5 oz of the caster sugar, add in eggs, sift the flour, baking powder and cocoa powder and add, mix well. Then pour into the cupcake cases, bake at 180 degrees C for 20 minutes. Cool. Meanwhile heat the remaining sugar and let turn golden brown and then add in 2 fl oz of the cream and the butter and heat gently, stir to make a smooth caramel, add in chopped peanuts, leave until cool but not set. Spoon over the cupcakes. Melt chocolate with the remaining cream and golden syrup in a small pan and spoon over and let set.
