Chinese Chicken Soup
Ingredients:
- Green onions 5-6
- Small shiitake mushrooms (re-hydrated, finely sliced) 6
- Chicken stock 5 cups
- Shredded boiled chicken breast 2 cups
- Eggs (beaten) 2
- Salt to taste
- Ground black pepper to taste
- Soya sauce 2 tsp
Method:
- Slice the onions finely, reserving the green part for garnish later. Add the chicken stock to a pot and bring to a boil. Add the onions and mushrooms and sauté for 3 minutes. Add the shredded chicken and stir well. Whisk together the eggs, salt and pepper until frothy and thick. Steadily pour the mixture into the pot, constantly stirring to form shreds. Cook, stirring constantly for 2 minutes. Add the soya sauce and mix well. Serve in soup bowls with the reserved green onions.
