Cream of Mushroom Soup
Cream of Mushroom Soup
Ingredients:
- Fresh mushrooms 1 lb
- Onion (chopped) 1 (small)
- Butter 4 tbsp
- Chicken stock 1 cup
- Butter 4 tbsp
- Flour 3 tbsp
- Milk or cream 2 cups
- Salt 1/2 tsp
- Pepper 1/4 tsp
- Cream 1-1/2 cups
- Fresh parsley (to garnish) 1 tbsp
Method:
- Sauté mushrooms and chopped onion in 4 tablespoons of butter. Cook slowly for 20 minutes, stirring regularly. Add chicken stock. Melt over low heat the other 4 tablespoons butter. Add flour and cook for 5 minutes, stirring. Add milk or cream slowly and stir until thickened and smooth. Add salt and pepper. Stir in mushrooms, onion and chicken stock. Slowly add cream. Serve garnished with fresh, chopped parsley.
