Marmalade Cupcakes
Ingredients:
- Unsalted butter 5 oz
- Caster sugar 3 oz
- Orange marmalade 3 oz
- Eggs 2
- Flour 6 oz
- Baking powder 1-1/2 tsp
- Vanilla essence 1 tsp
- Orange peel to decorate
Method:
- Beat butter and sugar, add eggs, marmalade, flour and baking powder, vanilla essence, mix well and put in a paper case lined cupcake tin. Put thin strips of orange peel on each cupcake. Bake at 180 degrees C for 20 minutes or until risen and firm to touch. Cool on a wire rack and serve.
