Vegetable Calzone
Ingredients:
- Pizza dough 1
- Grated cheese 1/2 cup
- Mixed Italian herbs
- Chilli flakes
- Carrot (peeled and chopped) 1
- Corn 1/2 cup
- Chopped capsicum 1/2 cup
- Onion (thinly sliced) 1
- Chopped tomatoes 2
- Sugar 1 tsp
- Chilli flakes 1 tsp
- Dried basil 1 tsp
- Oil 2 tbsp
- Salt to taste
- For filling, heat oil. Add onions and sauté till translucent. Add the chopped tomatoes and sugar. Cook till tomatoes are done. Now add all the veggies and sauté well. Add 1/2 cup water and cook till water is absorbed and veggies are half cooked. Add salt, chilli flakes and mix well. Remove from flame, add basil and set aside.
- To make the Calzone pockets: Take the raised pizza dough and punch back and knead well. Make 4 equal sized balls. Roll a portion into a circle. Spread the filling in one half. Add grated cheese. Close with other half, seal the edges and press with a fork. Transfer gently to a greased and floured baking sheet. Bake at 180 degrees C for 18-20 minutes till the top turns golden brown. Serve hot.
