Crunchy-top Cake
Ingredients:
- Flour 1-1/2 cups
- Baking powder 1-1/2 tsp
- Caster sugar 6 tbsp
- Salt 1/2 tsp
- Butter 1/3 cup
- Milk 1/2 cup
- Egg 1
- Vanilla essence 1/2 tsp
- Butter (melted) 2 tbsp
- Brown sugar 1/2 cup
- Flour 2 tbsp
- Ground cinnamon 1/2 tsp
Method:
- Mix together the flour, baking powder, sugar and salt. Cut in the butter with a pastry blender or two knives till crumbs form. Beat the egg, then stir in the milk and vanilla. Add the egg-milk mixture to the flour mixture all at once. Stir carefully until just blended. Pour batter into greased and floured 9-inches square pan and spread evenly. Drizzle top with melted butter. In a small bowl mix together brown sugar, 2 tablespoons flour and 1/2 teaspoon cinnamon. Sprinkle on top of cake. Bake in the preheated oven at 220 degrees C for 15 to 20 minutes, or until a toothpick inserted into the center of the cake comes out clean.
