White Chocolate Cupcakes


Ingredients:
  • Butter 5 oz
  • Caster sugar 5 oz
  • Flour 6 oz
  • Baking powder 1 tsp
  • Eggs 3
  • Vanilla essence 1 tsp
  • White chocolate chips 2 oz
  • White chocolate slab to make curls
  • Icing sugar to dust
Frosting:
  • White chocolate chopped 7 oz
  • Milk 5 tbsp
  • Icing sugar 6 oz
Method:
  • Beat butter add sugar, eggs, vanilla essence, flour and add in the chocolate chips. Pour batter in cupcake cases and bake at 180 degrees C for 20 minutes or till done. Cool. For the frosting, melt the white chocolate on a bowl set on a pan of simmering water, add in the milk and when melted, remove from heat and add the icing sugar, mix until smooth. Spread the frosting over the cupcakes whilst still warm. Decorate with curls made from the white chocolate slab, using a vegetable peeler. Lightly dust with icing sugar and serve.
