Thandai


Ingredients:
  • Milk 1 liter
  • Caster sugar ½ cup
  • Saffron a few strands
  • Pistachios (thinly slivered) to garnish 2 
  • To be ground into a fine powder:
  • Almonds 1/4 cup
  • Poppy seeds 2 tbsp
  • Fennel seeds 2 tbsp
  • Cardamom powder 1/2 tsp
  • White peppercorns 20
  • Rose water or kewra water 2 tsp
Method:
  • Boil the milk. Add the sugar to the milk and ensure that it is well blended. Allow the milk to cool completely. Keep aside. Add the ground powder and mix well. Refrigerate the mixture for 3 to 4 hours. Strain the mixture through a very fine sieve, add a few strands of saffron, and mix well. Refrigerate n serve chilled.
