Spicy Kofta Curry



Ingredients For the Koftas:
  • Pine nuts 2 tbsp
  • Beef mince 500 gm
  • Onion (grated) 1
  • Chopped parsley 1/4 cup
  • Garlic (crushed) 1 clove
  • Ground cumin 1-1/2 tsp
  • Egg 1
  • Salt to taste
  • Ground black pepper to taste
For the Curry:
  • Chopped tomatoes 2 cups
  • Ghee 1 tbsp
  • Milk 1/4 cup
  • Cream 2 tbsp
  • Sugar 1/2 tsp
  • Salt to taste
Masala Paste (for the Curry):
  • Chopped onions 3/4 cup
  • Garlic 4 cloves
  • Coriander seeds 2 tsp
  • Cumin seeds 1 tsp
  • Poppy or sesame seeds 2 tsp
  • Ginger 1-inch piece
  • Green chillies (chopped) 2
  • Whole dry Kashmiri red chillies 6
  • Chopped coriander 1 tbsp
  • Turmeric powder 1/4 tsp
  • Water 1/2 cup
Method:
  • For the koftas, combine all the ingredients in a bowl and mix well. Heat the oil in a wok, drop spoonfuls of the mixture into it and deep-fry a few at a time until it turns golden brown in colour from all the sides. Drain on absorbent paper and keep aside. 
  • For the curry, combine the tomatoes and 1 cup of water in a pan and cook till the tomatoes are soft. Cool and blend till smooth. Strain the pulp and keep aside. For the masala paste grind all the ingredients with water till smooth. Heat the ghee, add the masala paste and sautĂ©. Add the tomato pulp and milk, mix well and cook stirring occasionally. Add the cream, sugar and salt and cook. Just before serving, add the koftas, mix gently. Serve with parathas or steamed rice.
