Apple Crepes


Ingredients for the Apple Filling:
  • Unsalted butter 3 tbsp
  • Apples (peeled and cubed) 3
  • Brown sugar 1/2 cup
  • Orange juice 2 tbsp
  • Lemon juice 2 tsp
For the Caramel Sauce:
  • Water 1/2 cup
  • Sugar 1 cup
  • Cream 1 cup
  • Salt a pinch
  • Vanilla essence 1/2 tsp
  • Vanilla ice cream to serve OR
  • Whipped cream to serve
For Crepes:
  • Flour 8 oz
  • Eggs 3
  • Milk 8 oz
  • Water 8 oz
  • Oil 2 oz
Method:
  • To make the crepes, mix flour, eggs and milk and whisk, add oil, water and make a smooth batter for thin crepes, let stand for a while and then heat a crepe pan, brush with oil or butter and cook a ladle-full of crepe batter, for a minute on each side and then layer on a plate with greaseproof paper in between so they don’t stick. 
  • To make the apple filling, melt butter and sautĂ© diced apples for 8 -10 minutes. Add brown sugar and orange and lemon juice. Simmer for 5 to 8 minutes or until liquid has reduced to a thick syrup. Keep warm. To make the caramel sauce, combine water and sugar in a small saucepan over medium heat. Boil until syrup is thick and deep amber in color. Remove sugar syrup from heat and then very carefully add cream, salt, and vanilla. Simmer over low heat and whisk until smooth, about 2 minutes. Cool to room temperature. TO assemble the crepes, lay crepe flat on a work surface. Fill center with 3 to 4 tablespoons of cooked apple filling. Carefully fold one side toward the center then fold the other side to make a triangle. To serve, place one or two filled crepes on a serving plate. Top with a scoop of vanilla ice cream or whipped cream then drizzle with caramel sauce.
