Mocha Cupcakes


Ingredients:
  • Water 8 fl oz
  • Caster sugar 8 oz
  • Butter 4 oz
  • Cocoa powder 2 tbsp
  • Baking soda 1/2 tsp
  • Coffee powder 2 tbsp
  • Flour 8 oz
  • Baking powder 1 tsp
  • Eggs 2
Icing:
  • Chocolate 5 oz
  • Unsalted butter 5 oz
  • Golden syrup 2 tbsp
  • Chocolate chips to decorate OR
  • Chocolate-dipped coffee beans to decorate
Method:
  • Heat water and sugar till sugar is dissolved. Add in butter, cocoa powder, baking soda, coffee powder and boil. Reduce heat, simmer, remove from heat and cool. Beat the flour and eggs in the cooled mixture. Spoon batter in cupcake cases and bake at 180 degrees C for 20 minutes or till risen and firm. Cool and then ice. For the icing, melt chocolate, butter and golden syrup in a bowl set on a pan of simmering water. Cool and then spread over cooled cupcakes and decorate with chocolate-dipped coffee beans or chocolate chips.
