Marmalade Cupcakes


Ingredients:
  • Unsalted butter 5 oz
  • Caster sugar 3 oz
  • Orange marmalade 3 oz
  • Eggs 2
  • Flour 6 oz
  • Baking powder 1-1/2 tsp
  • Vanilla essence 1 tsp
  • Orange peel to decorate
Method:
  • Beat butter and sugar, add eggs, marmalade, flour and baking powder, vanilla essence, mix well and put in a paper case lined cupcake tin. Put thin strips of orange peel on each cupcake. Bake at 180 degrees C for 20 minutes or until risen and firm to touch. Cool on a wire rack and serve.
