Homemade Vegetable Stock
 

Ingredients:
  • Unsalted butter 1 tbsp
  • Chopped onion 1 cup
  • Chopped carrot 1 cup
  • Chopped white turnip 1 cup
  • Chopped celery 2 cups
  • Fresh parsley 3 sprigs
  • Cloves 2
  • Bay leaf 1
  • Garlic 1 clove
  • Thyme 1 tsp
  • Coarse salt 1 tsp
  • Ground black pepper 1/4 tsp
  • Tomatoes 4
Method:
  • Melt butter. Add onion. Sauté onion until golden. Add chopped carrots, chopped turnips, chopped celery, fresh parsley, cloves, bay leaf, garlic, thyme, coarse salt, fresh ground black pepper, tomatoes, and water to pan. Cover and simmer. Strain vegetable stock through muslin lined strainer.
