Chocolate Peanut Cupcakes


Ingredients:
  • Unsalted butter 5 oz
  • Caster sugar 8 oz
  • Eggs 3
  • Flour 5 oz
  • Baking powder 1-1/2 tsp
  • Cocoa powder 1 oz
  • Salted peanuts (chopped) 2 oz
  • Water 3 tbsp
  • Cream 3 fl oz
  • Butter 1 oz
  • Chocolate 4 oz
  • Golden syrup 1 tbsp
Method:
  • Beat butter and 5 oz of the caster sugar, add in eggs, sift the flour, baking powder and cocoa powder and add, mix well. Then pour into the cupcake cases, bake at 180 degrees C for 20 minutes. Cool. Meanwhile heat the remaining sugar and let turn golden brown and then add in 2 fl oz of the cream and the butter and heat gently, stir to make a smooth caramel, add in chopped peanuts, leave until cool but not set. Spoon over the cupcakes. Melt chocolate with the remaining cream and golden syrup in a small pan and spoon over and let set.
