Chocolate Orange Cupcakes


Ingredients:
  • Butter 4 oz
  • Caster sugar 4 oz
  • Eggs 2
  • Flour 4 oz
  • Baking powder 1-1/2 tsp
  • Cocoa powder 1 oz
  • Finely grated rind of 1 orange
  • Orange peel to decorate
Icing:
  • Chocolate 4 oz
  • Butter 4 oz
  • Icing sugar 4 oz
  • Cocoa powder 2 tbsp
Method:
  • Beat butter and caster sugar, add eggs, flour, cocoa powder, baking powder, orange rind and beat till creamy. Pour in cupcake cases and bake at 180 degrees C for 20 minutes. Cool when done. For the icing, melt chocolate on a double boiler and let cool. Beat butter, add in icing sugar, sifted cocoa powder and cooled chocolate and pipe on the cooled cupcakes and decorate with orange peel and serve.
