Orange French Toast

Ingredients:

  • Eggs 2
  • Orange zest (grated) of 1 orange
  • Milk 60 ml
  • Ground cinnamon 1/4 tsp
  • Bread 2 large slices
  • Orange juice of 1 orange
  • Marmalade 75 gm
  • Caster sugar 50 gm
  • Butter 1 tbsp
Method:
  • Whisk the eggs, orange zest, milk and ground cinnamon in a wide shallow dish. Soak the bread slices in this mixture for a few seconds. Boil the orange juice, marmalade and sugar on high and then simmer for 3-4 minutes. Heat the butter in a frying pan and cook the bread for about 2 minutes a side over a medium heat until golden. Serve the French toast with some of the orange syrup poured over each slice, and some extra syrup on the side.
