Salad Cream

Salad Cream 



Ingredients:
  • Eggs (hard-boiled, yolks only) 2
  • Mustard 2 tbsp
  • Lemon juice of 1/2 lemon
  • Caster sugar 1 tbsp
  • White vinegar 3 tbsp
  • Cream 150 ml
  • Olive oil 150 ml
  • Salt to taste
  • Ground white pepper
Method:
  • Place all of the ingredients, apart from the olive oil and seasoning, into a food processor. Blend until the cream starts to thicken then gradually add the oil, until the salad cream is smooth and emulsified. Season, to taste, with salt and ground white pepper.
