Green Chicken Biryani


Ingredients:
  • Chicken breasts (boneless and cubed) 2
  • Yogurt 1/2 cup
  • Salt 1-1/2 tsp
  • Spinach leaves (chopped) 3 cups
  • Oil 2 tbsp
  • Coriander powder 2 tbsp
  • Turmeric powder 1/2 tsp
  • Red chilli powder 1 tsp
  • Rice 1 cup
  • Grind to a Paste:
  • Onions 2
  • Ginger 1-inch piece
  • Garlic 5-6 cloves
For Garnish:
  • Chopped coriander leaves 2 tbsp
  • Chopped green chillies 2-3
  • Lemon juice of 1 lemon
Method:
  • Mix ground paste with yogurt and salt. Rub into chicken and set aside to marinate for 1 hour. Place chopped spinach in a strainer and pour 2 cups of boiling water over spinach. Drain, puree, and set aside. Heat oil. Add chicken with its marinade, spinach, and spice powders. Cover and cook till chicken is done. Drain rice and add to pan. Mix in water. Cook rice till water is absorbed and rice is tender. Sprinkle with coriander leaves, chillies and lime juice.
