Eid Meatloaf





 


Ingredients:

  • Mutton or beef mince (very fine) ½ kg
  • Fine breadcrumbs ¾ cup
  • BBQ sauce 2 tbsp
  • Chopped onion 1
  • Crushed garlic 2 cloves
  • Chopped celery (stalk and leaves) ½ cup
  • Worcestershire sauce 1 tbsp
  • Crushed black pepper 1 tsp
  • Mustard paste ½ tbsp
  • Egg 1
  • Brown sugar 1 tsp
  • Olive oil 2 tbsp
  • Salt to taste
  • Hard-boiled egg (sliced) 1 for garnish
Method:
  • Heat oil, sauté the onions and garlic. Add the celery, pepper, salt and sugar. Cook on high heat for a minute. Put in a bowl and let cool. Add to the mutton or beef mince the cooked and cooled celery-onion mixture, the beaten egg and breadcrumbs. Combine the BBQ sauce, Worcestershire sauce and mustard paste. Place in a greased loaf pan. Bake at 180 degrees C in a pre-heated oven for 20 minutes or till it is done. Overcooking will make it dense. Slice when cool, serve with veggies or sliced in a sandwich.
