Chicken Maharani
 


Ingredients:
  • Chicken 1 kg
For Marination:
  • Garlic 10-15 cloves
  • Ginger 2-inch piece
  • Chilli powder 4 tsp
  • Garam masala 2 tsp
  • Coriander powder 1-1/2 tbsp
  • Cumin powder 1 tsp
  • Powdered carom seeds 1 tbsp
  • Dry fenugreek leaves 2 tbsp
  • Corn flour 2 tbsp
  • Rice flour 2 tbsp
  • Lemon juice of 2 lemons
  • Salt to taste
  • Soya sauce 1 tbsp
Other Ingredients:
  • Onions (sliced) 4
  • Green chillies 6
  • Soya sauce 1/2 tsp
  • Black pepper 1/2 tsp
  • Curry leaves few
  • Chopped coriander 2 tbsp
Method:
  • Grind the ginger and garlic. Marinate chicken with all the above ingredients for 2-4 hours in a refrigerator. Deep fry the marinated chicken a little at a time in hot oil on a low flame and set aside. In the same oil, fry the onions and green chillies till onions turn a light brown. Add soya sauce and pepper. In another pan, fry a few curry leaves and set aside. Add the curry leaves to the fried onions, add the fried chicken, chopped coriander and mix well before serving.
