Achaari Hara Mutton


Ingredients:
  • Mutton ½ kg
  • Green chilies (thinly sliced) 2
  • Salt 1 tsp
  • Allspice 1 tsp
  • Coriander powder 1 tsp
  • Yogurt 1 cup
  • Coriander leaves ½ cup
  • Oil ½ cup
For Onion Paste:
  • Onions 2
  • Green chilies 8
  • Ginger garlic 1 tbsp
  • Coriander leaves 3 tbsp
For Achaari Masala:
  • Fennel seeds 1 tsp
  • Cumin seeds 1 tsp
  • Mustard seeds ¾ tsp
  • Onion seeds ¾ tsp
  • Fenugreek seeds ¼ tsp
Ingredients for Baghar:
  • Oil ¼ cup
  • Mustard seeds ½ tsp
  • Onion seeds ½ tsp
  • Curry leaves 20
Method:
  • Grind all the ingredients under achaari masala coarsely, keep a side. Grind together all the ingredients under onion paste and keep aside.Blend together yogurt and coriander leaves and keep aside. Heat oil in a pressure cooker, add green chilies and coarsely crushed achaari masala, fry for 2 minutes.Add grinded onion paste, cook for 5 minutes till golden, add mutton, fry for 10 minutes add salt, allspice, coriander powder, 1 cup water, cook for 15 minutes then open and add blended yogurt and coriander mixture stirring continuously bring to boil. Cook till thick gravy left, lastly give baghar, serve with nan.
