Eggless Almond Chocolate-filled Cookies 


Ingredients:
  • Flour 2 cups
  • Butter 1 cup
  • Sugar 3 tbsp
  • Cinnamon powder 1/2 tsp
  • Vanilla essence 1/2 tsp
  • Milk 2-3 tbsp
  • Salt 1/4 tsp
  • Icing sugar to dust few tbsp
For Almond Chocolate Filling:
  • Ground almonds 1/2 cup
  • Sugar 1/3 cup
  • Chocolate chips 3 tbsp
  • Vanilla essence 1/2 tsp
Method:
  • Mix all the ingredients required for filling in a bowl and keep aside.for the cookies in a bowl, combine flour, salt, vanilla essence, sugar, butter and combine. Add 2-3 tbsp milk and make a smooth soft dough. Make small balls. Flatten the ball using your fingers and place a tbsp of filling in the center and enclose it. Roll into a smooth round ball. Prepare with rest of the dough and place on baking sheet about an inch apart. Lightly flatten the balls.Bake in a pre-heated oven at 180 C for about 28-30 minutes till the edges are slightly toasted or till done. While the cookies are warm, dust them with icing sugar. If not dusting with icing sugar, add another 2 tbsp of sugar to the dough at the time of mixing the dough ingredients. Cool on a wire rack. Store in an airtight container.
