Crusted Chicken 


Ingredients:
  • Chicken drumsticks (make deep cuts) 1 kg
  • Milk 1/2 cup
  • Lemon juice of a lemon
  • Grated onion 2 tbsp
  • Crushed garlic 1 tbsp
  • Black pepper 1/4 tsp
  • Salt a pinch
  • Panko breadcrumbs 3/4 cup
  • Parmesan cheese (grated) 1 ounce
  • Chopped greens of spring onions 2 tbsp
For Sauce:
  • Mayonnaise 2 tbsp
  • Plain yogurt 2 tbsp
  • Honey 1-1/2 tsp
  • Mustard 1-1/2 tsp
  • Dijon mustard 1/2 tsp
Method:
  • Mix lemon juice and milk and let it turn to buttermilk. Place buttermilk, onion, garlic, and drumsticks in a box and refrigerate 1 hour. Discard the marinade. Sprinkle the drumsticks with pepper and salt. Combine panko breadcrumbs, parmesan cheese, and spring onion greens in a dish. Dredge each drumstick in panko mixture. Arrange drumsticks in a single layer on a greased oven rack. Bake drumsticks at 250 degrees C for 30 minutes or until chicken is done. Combine mayonnaise, dijon mustard, mustard, honey and yogurt in a small bowl. Serve sauce with chicken.
