Daal Palak


Ingredients:
  • Chopped onion 1 large
  • Cubed potatoes 2
  • Fresh ginger (minced) 1-inch piece
  • Garlic (minced) 6 cloves
  • Coriander 2 tsp
  • Garam masala 1 tbsp
  • Red chili powder 2 tsp
  • Chopped tomatoes 2-3
  • Spinach (cut into ribbons) 2 bunches
  • Red lentils 1 cup
  • Water or chicken stock 3 cups
  • Salt 1 tsp
  • Chopped spring onions 3-4
  • Oil 2 tbsp
Method:
  • Heat oil. Add the onions, and one teaspoon of salt, and cook until the onions are translucent. Add the potatoes and cook. Next add the ginger, garlic, spices. Add the chopped tomatoes, spinach, and the lentils. Stir to combine everything and then add 3 cups of water or chicken stock. Boil and then let it simmer until the lentils and potatoes are cooked through. Stir in half of the chopped spring onions, reserving the rest to use as garnish. Serve daal with rice, naan, or chapattis.
