Eggless Cookies


Ingredients:
  • Flour 1-1/2 cups
  • Vanilla custard powder 1/2 cup
  • Icing sugar 1/2 cup
  • Sugar 1 tbsp
  • Unsalted butter 1 cup
  • Milk or water 2-3 tbsp
Method:
  • Beat butter and icing sugar till smooth & creamy. Now sift in the flour & custard powder and mix gently. Make smooth dough. If required you may add a tbsp or two of milk. Do not knead the dough too much, else the cookies will turn hard. Pinch a small ball sized dough and make it into a smooth round ball. Take a tbsp of sugar in a plate and roll the cookie dough in it so that the sugar sticks on all sides. Place on baking sheet and press it gently with a fork to form marks. Bake at 180 degrees C for 10-12 minutes or until the cookies turn slightly golden in the edges. Once baked, cool them on a wire rack. The cookies will look soft when hot, but will be crispy once they cool down. So do not over bake.
