Egg Fried Rice
 

Ingredients

  • Spring onions, chopped 2
  • Eggs 2
  • Salt 1 tsp
  • Black pepper to taste
  • Oil 4 tbsp
  • Cooked rice 4 cups
  • Soya sauce 1 – 2 tbsp
Method

  • Lightly beat the eggs with the salt and pepper.Heat a wok add 2 tablespoons oil. When the oil is hot, add the eggs. Cook, stirring, until they are lightly scrambled but not too dry. Remove the eggs and clean out the pan. Add 2 tablespoons oil. Add the rice. Stir- fry for a few minutes. Stir in the soya sauce. Add the scrambled egg back into the pan. Stir in the green onion. Serve hot.
