Vegetable Cheese Bake


Ingredients
  • Carrots ½ cup
  • French Beans ½ cup
  • Peas ½ cup
  • Cauliflower ½ cup
  • Bread Crumbs 4 tbsp
  • Capsicum, sliced 1
  • Onion, sliced 1
  • Cheddar Cheese grated ¼ cup
  • Butter 1 tsp
  • Ketchup ¼ cup
Ingredients for the White Sauce
  • Flour 2 tbsp
  • Milk 2 cups
  • Butter 1 tbsp
  • Nutmeg a pinch
  • Sugar ¼ tsp
  • Dried Oregano ½ tsp
  • Pepper ¼ tsp
  • Cheddar Cheese grated 3 tbsp
  • Salt to taste
Method
  • Blanch the vegetables and drain, reserving ¼ cup of the liquid. Refresh the blanched vegetables in cold water & drain. For the white sauce, melt butter in a pan on low heat. Add the flour & mix with the butter. Take pan off fire and add milk gradually using a whisk and then cook on low heat till the sauce thickens. Add pepper, grated cheese, dried oregano, nutmeg & salt and the reserved stock. Put the vegetables in a greased dish and pour the sauce evenly on the vegetables. Sprinkle bread crumbs, ¼ cup cheese, sliced onions & capsicum, pepper powder & dot with butter.Sprinkle a little ketchup on top. Bake in a pre-heated oven at 200C till it bubbles & the top turns a light golden brown about 20 minutes. Serve with garlic bread.
