Jam Bars


Ingredients
  • Flour 1 cup
  • Baking powder 1 tsp
  • Cold butter, cubed ½ cup
  • Egg 1
  • Milk 1 tbsp
  • Jam 1/3 cup
  • Topping
  • Egg 1
  • Sugar 1 cup
  • Butter, melted 1 tbsp
  • Flaked coconut 2 cups
Method
  • Mix flour and baking powder, cut in butter cubes and rub till mixture resembles breadcrumbs. Mix in egg and milk, stir. Press into a greased 9” square baking tin, bake at 180 degrees C for 15 minutes, or till lightly browned. Spread jam over crust, mix topping ingredients, butter, egg and sugar and mix in flaked coconut and bake at 180 degrees C for 25 minutes, or till lightly brown, cut in squares whilst still warm n serve.
