Fruit Nut Gelatin Salad


Ingredients
  • Crushed pineapple, with juice 2 ½ cups
  • Orange flavored jelly 1 packet
  • Cream cheese, softened 3 ounce
  • Olives chopped 1 cup
  • Cream 1 cup
  • Celery diced 1 cup
  • Walnuts chopped 1 cup
Method
  • In a saucepan, heat pineapple and juice over medium heat until boiling.Add gelatin and stir to dissolve. Remove from heat and refrigerate until partially set. In a small bowl, blend the olives into the softened cream cheese. Mix the gelatin mixture and cream cheese together, and then fold in the whipped cream, nuts and celery. Pour into a mold and chill until firm.
