Baked Capsicums


Ingredients
  • Capsicums 4
  • Broccoli florets 1 cup
  • Eggs 4
  • Milk 1/2 cup
  • Garlic crushed 1/2 teaspoon
  • Salt to taste
  • Black pepper, crushed to taste
  • Cream 3 tbsp
  • Oregano 1/4 teaspoon
  • Cheese, grated 4 tbsp
Method
  • Heat oven to 180 degrees centigrade. Cut about 1/2 inch off tops of capsicums and remove seeds. Place them upright in muffin trays. Spoon 1/4 cup broccoli into each capsicum. Beat eggs, cream, milk, garlic, salt and pepper and oregano in a bowl until blended. Pour evenly over broccoli. Sprinkle cheese and bake until knife inserted near center comes out clean, 15 minutes.
